Ingredients for 4 servings:
- 400 g turkey or chicken
- ½ small onion(s)
- 1 tsp flour
- 500 ml coconut milk
- Curry powder, mild, to taste
- Curry powder, hot, to taste
- 1 cup of cream or crème fraîche
- 1 small can of pineapple, diced
- Salt
- pepper
- some herbs of your choice
- oil
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Dice the turkey or chicken or cut into thin strips. Also finely slice half of the small onion. Heat the oil in a frying pan and quickly brown the meat in batches. Add the diced onion and season with salt. Dust with flour and immediately pour in the coconut milk. Simmer gently for about 20 minutes, stirring frequently. Add the cream or crème fraîche and simmer for another 10 minutes. Season with curry powder and pepper and add a few herbs, if desired. Stir in the diced pineapple with its juice and bring back to a boil. This goes perfectly with basmati rice or noodles.
