Indian-style spinach sauce

Ingredients for 2 servings:

  • 500 g leaf spinach (frozen)
  • 1 onion(s)
  • 2 garlic cloves
  • 1 cm ginger, fresh
  • 2 tsp curry powder
  • 150 ml vegetable stock
  • 150 g ricotta
  • 3 tbsp raisins
  • salt and pepper
  • some butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Chop the onion, garlic, and ginger, and fry in butter. Add the curry powder. Add the spinach and broth and simmer for about 10 minutes (if the spinach is already thawed). Stir in the ricotta and raisins and cook for another 5 minutes. Season with a little salt and pepper. Goes well with pasta!
