Indian vegetable rice with mandarins

Ingredients for 2 servings:

  • 120 g rice
  • 2 spring onions, in rings
  • 2 carrots, diced
  • 200 g mandarin orange(s), from the can
  • 150 g cauliflower, cut into small florets
  • 250 ml vegetable stock
  • salt and pepper
  • curry powder
  • Paprika powder
  • coriander
  • Ginger powder
  • oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cook the rice until tender. Sauté the spring onions, carrots, and cauliflower in a little oil. Deglaze with vegetable stock and simmer, covered, for about ten minutes. Add the rice and drained mandarin oranges to the vegetables and heat until hot. Season to taste.
