Ingredients for 1 servings:

  • 250 g wheat flour
  • 6 g baking powder (2 teaspoons)
  • 100 g sugar
  • 1 packet of vanilla sugar
  • some salt
  • 5 drops flavoring (lemon baking oil)
  • 1 egg(s)
  • 125 g butter or margarine
  • 4 tbsp red jam for spreading
  • some powdered sugar for dusting

Instructions

Working time approx. 50 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour

Combine flour and baking powder and sift onto a baking board (tabletop). Make a well in the center, add sugar, spices, and egg, and mix with some of the flour to form a thick paste. Add the cold fat, cut into pieces, then cover with flour. Starting in the center, quickly knead all the ingredients into a smooth dough. If it sticks, chill for a while. Roll out the dough thinly and cut out cookies using a round cookie cutter (about 8 cm). Cut out half of the cookies with a small cutter to create three “eyes.” Place the cookies on a baking sheet and bake at 175-195°C (350-375°F) for about 10 minutes until golden brown. Spread the unpierced cookies evenly on the bottom with jam and place the remaining cookies, dusted with powdered sugar, on top.
