Italian chicken breast fillet with herbs

Ingredients for 4 servings:

  • 4 servings of chicken breast fillet(s)
  • 250 g red bell pepper(s)
  • 4 tbsp mixed Italian herbs
  • 4 tbsp pine nuts
  • 4 tsp lemon juice
  • olive oil
  • salt and pepper
  • Garlic, optional

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 220°C. Cut aluminum foil into strips approximately 25-30 cm long. One strip is needed for each chicken breast. Brush the foil with olive oil. Wash the chicken breasts, pat dry, season with salt, pepper, and garlic (if desired), and place each in the center of the foil. Cut the bell peppers into strips and arrange them around the chicken breasts. Sprinkle the Italian herbs over the meat and vegetables. Wrap and seal the foil, and place the parcels in the oven for 25 minutes. Then open the foil, scatter the pine nuts among the parcels, and bake for another 10 minutes. Serve drizzled with olive oil and lemon juice.
