Ingredients for 2 servings:

  • 1 large endive salad
  • 2 tbsp raisins
  • 2 tbsp pine nuts
  • 1 tbsp olive oil
  • 1 clove(s) garlic
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

also suitable as a pizza topping

Wash the endive, tear or chop into small pieces, and place it in cold, salted water until it has wilted. Drain well, squeezing a little if necessary. Press or finely chop the garlic. Heat the olive oil in a pan and fry the endive with the garlic for a short time. Add the raisins and pine nuts. Toast them a little too (not for too long, or the pine nuts will become too hard). Season with salt and pepper and serve. It also tastes great as a pizza topping.
