Italian grilled tomatoes with garlic

Ingredients for 2 servings:

  • 2 m.-large tomato(s)
  • 4 garlic cloves
  • 1 bag(s) of ready-made salad dressing mix (garden herbs or paprika)
  • 50 g sheep’s cheese or feta cheese
  • olive oil

Cut the tomatoes and feta cheese into small cubes. Finely chop the garlic, brush 4 pieces of aluminum foil (approx. 15 x 15 cm) with olive oil. Place the pieces of 1/2 tomato in the center of each, add a few pieces of feta cheese and pieces of garlic (each from 1 clove), and spread the salad mix sachet on top. Twist the aluminum foil into small bags. We always place the bags on the very edge of the grill for about 10-15 minutes so that the bags only receive a little heat. Rotate them occasionally so that the bags are facing the heat on all sides. You can also cook this in the oven or use muffin tins instead of aluminum foil. Feta cheese is also cheaper than feta cheese, but it is creamier and (we) like it better. I use leftover feta cheese in a colorful farmer’s salad or use it for baking in my next recipe. But even without cheese, it tastes delicious and is suitable for vegans. And it has (almost) no calories. With cheese, each bag has about 40 kcal. A great side dish for a barbecue. Or serve it on toasted white bread as bruschetta, as a starter or small snack. The tomato bags are so popular with us that I always allow 5 bags per person. For this recipe, I calculated 2 bags per person – so 2 bags = 1 serving.
