Ingredients for 1 servings:
- 150 g butter
- 150 g sugar
- 2 tsp lemon(s) – zest, grated
- 350 g flour
- 2 eggs
- 4 tbsp lemon or orange marmalade
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes
Quickly knead the butter, sugar, lemon zest, and flour into a smooth dough. Cover and chill for about 2 hours. Preheat the oven to 200 degrees Celsius. Line a baking sheet with parchment paper. Using a teaspoon, drop small portions of dough onto the sheet, leaving plenty of space between each one. Dip your thumb in flour and make a hollow in each cookie. Fill each cookie with a little jam. Bake the cookies on the middle rack of the oven for about 15 minutes. Let cool on the baking sheet.
