Ingredients for 2 servings:

  • 400g spaghetti
  • 150 ml beetroot juice
  • 100 g spinach
  • 100 g feta cheese
  • 20 g butter
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the pasta in plenty of salted water according to the package instructions. Drain the pasta, reserving 150 ml of the pasta water. In a small saucepan, combine the beetroot juice and butter and simmer over medium heat for 5-6 minutes. Pour the pasta water and beetroot reduction into a large pan and bring to a boil briefly. Season with salt and pepper. Add the pasta and spinach and heat for 2-3 minutes, stirring occasionally, until the pasta has browned. Crumble the feta cheese, if desired. Plate the pasta, scatter the feta cheese over the top, and serve.
