Italian pasta salad

Ingredients for 4 servings:

  • 500g penne
  • 1 jar olives, black (chopped)
  • 1 jar tomato(s), dried
  • 1 point sheep’s cheese or feta
  • 2 tbsp tomato paste
  • 3 tbsp balsamic vinegar (white or pink)
  • 6 tbsp olive oil
  • 6 tbsp water
  • 2 garlic cloves
  • salt and pepper
  • herbs, Italian

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the penne al dente according to the instructions. Rinse well and transfer to a large bowl. Drain the olives and add to the pasta. Chop the sun-dried tomatoes, feta cheese, and garlic cloves into small pieces and add to the pasta. Make a marinade from tomato paste, vinegar, oil, water, and spices. Pour over the pasta and mix well. This is an absolutely delicious pasta salad for any buffet or barbecue.
