Ingredients for 1 servings:

  • 250 g flour
  • 1 tsp dry yeast
  • 2 pinches of salt
  • 75 ml Sherry (Medium Dry)
  • 75 ml olive oil
  • 100 g sugar
  • 100 g apple slices, dried (soft apple slices)
  • 100 g pine nuts
  • powdered sugar

Working time approx. 30 minutes; Total time approx. 30 minutes

Christmas cookies with olive oil and apple pieces

Cut the dried apple slices (preferably soft apple slices) into very small cubes. Combine the flour, dried yeast, and salt in a bowl. Add the olive oil and sherry and mix. Knead in the sugar, dried and diced apple pieces, and pine nuts. Preheat the oven to 160°C (140°C fan-assisted). Shape the dough into walnut-sized balls and place them on a baking sheet lined with baking paper. Bake the pine nut balls for 15-20 minutes until light brown and crispy. Cool on a wire rack and dust with powdered sugar.
