For Italy fans – enough for about 65 pieces
Mix the flour, sugar, ginger, salt, and baking powder together thoroughly, sifting if necessary. Add 3 tablespoons of cold water and knead into a smooth dough with the eggs and butter. Halve the pecans lengthwise and mix them into the dough. Form the dough into rolls with a diameter of approximately 2-3 cm. Place on a greased baking sheet and bake in a preheated oven at approximately 150-175 degrees Celsius for approximately 30 minutes. Remove the rolls from the oven, let cool for approximately 10 minutes, and then carefully cut into slices approximately 1 cm in size. Arrange the slices back on the baking sheet and bake for another 15 minutes at 175-200 degrees Celsius. After baking, remove the cantuccini from the baking sheet and let cool thoroughly.
