Italian potato salad

Ingredients for 4 servings:

  • 400 g potatoes, boiled with skin, peeled
  • 200 g tomatoes, roughly diced
  • 100 g spring onion(s), cut into fine rings
  • 10 olives
  • 50 g Parma ham, cut into strips
  • 1 clove(s) garlic
  • 1 pack of Italian herbs
  • olive oil
  • Vinegar (wine)
  • Salt
  • Pepper, freshly ground
  • n. B. capers

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Total time approx. 55 minutes

Slice the peeled potatoes. Place them in a salad bowl along with the diced tomatoes and spring onion rings. Add the olives and strips of Parma ham and toss to combine. For the marinade, combine the olive oil, white wine vinegar, salt, pepper, garlic, and Italian herbs. Pour everything over the salad in the bowl and mix gently. Let it marinate for at least 30 minutes before serving. Tips: Chopped capers go well with the marinade. Tuna or salami can be used instead of the Parma ham.
