Italian spinach dumplings

Ingredients for 4 servings:

  • 250 g white bread
  • 150 ml milk
  • 500 g leaf spinach (2 handfuls)
  • 2 eggs
  • n. B. Flour, approx. 4 – 5 tbsp
  • salt and pepper
  • e.g. Parmesan, grated
  • e.g. tomato sauce

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Strangolapreti

Cut 250g of white bread into cubes and mix with 150ml of milk. Cover with a plate, place a weight on top, and let stand for at least two hours. Blanch two handfuls of spinach and finely chop. Mix with the bread, two eggs, 4-5 tablespoons of flour, and season with salt and pepper. Scoop dumplings from the mixture and let stand in boiling water for 5 minutes. Gratinate with Parmesan cheese and serve with tomato sauce.
