Spinach dumplings

Ingredients for 4 servings:

  • 300 g white bread, stale
  • 125 ml milk
  • 800 g spinach
  • 30 g butter
  • 1 clove(s) garlic
  • 1 onion(s)
  • 2 eggs
  • salt and pepper
  • 1 tbsp flour
  • 2 tbsp breadcrumbs
  • 80 g butter
  • 4 tbsp Parmesan, grated
  • nutmeg

Working time approx. 40 minutes; Total time approx. 40 minutes

Cut the bread into small pieces and moisten with milk as needed. Wash the spinach thoroughly and cook it in salted water until tender. Drain and squeeze dry liquid, then pass it through a sieve. Melt the butter, sauté the finely chopped garlic clove and onion in it, add the spinach, and sauté for 5 minutes. Add the eggs and spinach to the bread, mix well, season with salt, pepper, and nutmeg, and add the flour and breadcrumbs. Form the mixture into small dumplings and cook gently in salted water for about 15 minutes. Sprinkle with Parmesan cheese and serve with melted butter.
