Ingredients for 6 servings:

  • 12 small tomatoes
  • 3 packs of mozzarella
  • 5 tbsp basil, cut into strips
  • 5 tbsp whey from mozzarella
  • 8 tbsp olive oil
  • 6 tbsp balsamic vinegar
  • Salt
  • some basil, some leaves
  • Pepper, freshly ground

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Tomato – Mozzarella with a twist

Wash the tomatoes. Cut off the tops and scoop out the insides. Season the tomatoes with salt and pepper. For the filling, drain the mozzarella, reserving any liquid whey. Cut the mozzarella into small cubes and mix with the basil strips. Mix 5 tablespoons of the reserved whey from the mozzarella with olive oil and balsamic vinegar, then season with salt and pepper. Pour the marinade over the filling and let it sit for a while. Finally, spoon the filling into the tomatoes and serve garnished with a few basil leaves. Serve with flatbread or ciabatta as a side dish.
