Ingredients for 4 servings:

  • 2 onions
  • 2 cloves garlic
  • 1.2 liters of vegetable broth
  • 200 g carrot(s)
  • 200 g kohlrabi
  • 120 g mushrooms
  • 120 g peas (frozen)
  • 1 bunch of chives
  • 12 leaves of spinach
  • salt and pepper
  • 1 pinch(s) thyme
  • 1 pinch(s) basil
  • 1 pinch of nutmeg

Instructions

Heat the oil in a non-stick pan. Finely chop the onion and garlic and sauté in the oil. Pour in the vegetable stock, bring to a boil, and season with thyme, basil, and nutmeg. Add the thinly sliced ​​carrots and kohlrabi. Simmer for about 4 minutes. Add the sliced ​​mushrooms and peas. Simmer for about 3 minutes. Add the sliced ​​spinach leaves. Heat briefly again, then season with salt and pepper. Serve with about 1 tablespoon of finely chopped chives per serving.
