Ingredients for 4 servings:
- 1 stalk(s) leek
- 2 carrots
- 3 potatoes
- 1 zucchini
- 1 handful of green beans
- 50 g pasta (small macaroni, available separately for minestrone)
- onion(s)
- Garlic
- Salt
- pepper
- 500 ml vegetable stock
- 2 tbsp tomato puree
- olive oil
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Sauté the onion and garlic in a large pot with olive oil. Chop all the vegetables into small cubes, add them, and sauté briefly. Then add the vegetable stock. Simmer for about 30 minutes. Add the tomato puree and the pasta. Cook until al dente. Season with salt and pepper. Serve with a baguette.
