Recipe for a veggie jackfruit burger

Ingredients for 2 burgers:

  • 1 can of jackfruit
  • 1 onion
  • 1 clove of garlic
  • 40 grams of tomato paste
  • 1 tsp curry powder
  • Some olive oil
  • 2 burger buns
  • Salad to taste

  1. Heat olive oil in a pan
  2. Using a fork, pluck the jackfruit into small pieces and cut the onion and garlic into small cubes
  3. Sauté jackfruit pieces with onion and garlic until lightly browned
  4. Add curry and tomato paste and mix well

Vegetarian Jackfruit Curry Recipe

Ingredients for 2 servings:

  • 1 can of jackfruit
  • 1 onion
  • 1 can of chopped tomatoes
  • 200 ml coconut milk
  • 1 tsp curry powder
  • chili flakes
  • Some olive oil
  • salt and pepper
  • 1 cup of rice
  1. Prepare rice according to package directions
  2. Heat the olive oil in a pan and fry the curry powder in it
  3. Cut the onions and jackfruit into pieces, add to the pan and sauté
  4. Add canned tomatoes and chili flakes and simmer for a few minutes
  5. Add coconut milk and simmer again for a few minutes
  6. Season with salt and pepper and serve with rice

Recipe for stuffed zucchini with vegetarian jackfruit mince

Ingredients for 2 servings:

  • 1 large zucchini
  • 1 can of jackfruit
  • 1 onion
  • 1 clove of garlic
  • tomato paste
  • salt and pepper
  • 1 piece of mozzarella
  1. Divide the zucchini in half horizontally to create two “vessels”, remove the inside of the zucchini with a spoon so that it is only about 1.5 cm thick
  2. Cut the jackfruit, onion, and garlic into small cubes and place them in a bowl
  3. Add the tomato paste and spices to the ingredients in the bowl and mix well
  4. Fill the mixture into the two zucchini halves and top with mozzarella slices
  5. Bake the filled zucchini halves in the oven at 200 degrees top/bottom heat on a medium-high for 15-20 minutes

The vegetarian recipe for jackfruit wraps

Ingredients for 2 servings:

  • 2-4 wraps
  • 1 can of jackfruit
  • some paprika powder
  • some olive oil
  • 4 tablespoons natural yogurt
  • 1 avocado
  • 10 cocktail tomatoes
  • 100 g grated cheese (e.g. mozzarella)
  1. Cut the jackfruit into small pieces with a fork and sauté in a pan with olive oil for a few minutes, adding some paprika powder at the end
  2. Slice the avocado and dice the tomatoes
  3. Place the wraps on plates and top with the jackfruit and cheese, add a few spoonfuls of plain yogurt and add the avocado strips and tomato pieces at the end

Jackfruit smoothie recipe

Ingredients for one serving:

  • 8 pieces of flesh from a ripe jackfruit
  • 1 banana
  • 2 teaspoons chia seeds
  • 200 grams of coconut water
  • grated coconut
  1. Puree all ingredients in a blender.
  2. Depending on the desired consistency and sweetness, add sugar and coconut water if necessary
  3. Pour into a glass, sprinkle with grated coconut and serve fresh
