makes about 30 cookies

The dough is enough for about 30 double hearts, or 60 unfilled cookies. Make a shortcrust pastry from flour, egg yolk, sugar, lemon zest, and butter. Wrap in cling film and refrigerate for about 1 hour. Roll out the dough to a thickness of 4-5 mm, cut out hearts, and place them on a baking sheet lined with baking paper. Bake at 180°C (preheated) for about 7 minutes. Remove from the oven and let cool. Heat the jam in a saucepan and stir until smooth. Spread it on every other heart and place another heart on top. Dust the double hearts with powdered sugar.
