Ingredients for 2 servings:
- 6 lamb chops
- 3 tbsp orange juice, freshly squeezed
- 1 tbsp lime juice, freshly squeezed
- 2 tbsp soy sauce, dark
- 1 spring onion(s)
- 1 large garlic clove(s)
- 1 piece(s) ginger, fresh, cherry-sized
- 1 pinch of chili flakes
- 1 pinch of allspice powder
- 2 pinches of cinnamon powder
- 4 spring onions
- Salt
- 2 tomatoes
Instructions
Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour; Total time approx. 13 hours 15 minutes
Mix together the orange juice, lime juice, and soy sauce. Finely chop a spring onion, peel and grate the garlic and ginger. Mix everything together with chili flakes, allspice, and cinnamon to make a marinade. Marinate the lamb chops in this mixture overnight. Roughly chop four spring onions and slice the tomatoes. Place the meat in a roasting pan, arrange the spring onion pieces around it, dilute the remaining marinade with a little water, and add it. Cover and braise in the oven at 200°C for about 45 minutes. Add a little more water during braising if necessary. Now season the meat with salt and add the tomato slices. Braise for another 10 minutes. Serve the meat with the vegetables on some sauce.
