Japanese burgers with wasabi ketchup

Ingredients for 4 servings:

  • 120 ml ketchup
  • 2 tbsp soy sauce
  • 1 tbsp wasabi paste
  • 60 g breadcrumbs, or better still, old, diced rolls
  • 60 ml whole milk
  • 225 g minced beef, ideally made from roast beef)
  • 225 g minced pork
  • 60 g onion(s), chopped
  • 1 ½ tsp soy sauce
  • ½ tsp salt
  • ¼ tsp pepper
  • sesame oil
  • 4 burger buns

Instructions

Working time approx. 20 minutes; Rest time approx. 2 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 32 minutes

For the wasabi ketchup, whisk together the ketchup, soy sauce (2 tbsp), and wasabi paste (thicken slightly on the stovetop if necessary, over medium heat). Heat the grill over medium heat. For the burgers, in a large bowl, combine the breadcrumbs and milk. Let it sit for 2-3 minutes. Add the two types of ground meat, onions, soy sauce, salt, and pepper. Knead the mixture until it comes together, then divide into 4 equal portions. Form into 1.5-2 cm thick patties, press in the center slightly, and brush with a little sesame oil. Grill the burgers for about 10 minutes, until cooked through. Let rest for 2 minutes, then serve in a bun with wasabi ketchup.
