Japanese Noodle Soup with Chicken

Ingredients
 

  • 600 ml Chicken broth
  • 1 Chicken breast fillet
  • 3 Baby Pak Choi
  • 3 Nests Plain noodles
  • 3 Fresh shiitake or brown mushrooms
  • 1 Mini peppers, sliced
  • 1 packet Instant dashi
  • 0,5 Tl. Salt
  • 300 ml. Water
  • 1 El. Light soy sauce
  • 3 El. Mirin
  • 0,5 Cup Sake

Instructions
 

  • Pour water into the saucepan. Add dashi and warm up. Add the sake, mirin, salt and soy sauce and slowly bring to a boil. Let the chicken fillet cook in it, then remove and cut into slices. Briefly cook shiitake and pak choi in dashi soup.
  • Boil the pasta for approx. 3 minutes in water with a little salt. Drain the water, drain the pasta and rinse with cold water.
  • Mix the chicken stock with dashi soup. Bring the whole thing to the boil again, if necessary, season to taste.
  • Put plenty of noodles in a soup bowl. Place the chicken breast fillet cut into sections on the edge of the bowl. Add the baby pak choi, shiitake and paprika and scoop the broth over it. Repeat point 4 two more times.
