Jelly with daisies

Ingredients for 1 servings:

  • 500 g honey (spruce honey)
  • 500 g spruce shoots, young
  • 125 g daisies, bloomed
  • 625 ml water
  • 1 lemon(s), peel, grated, untreated
  • 500 g gelling sugar, 3:1

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Wash the spruce shoots thoroughly. Boil with the water for 10 minutes. Strain and immediately add the sugar to the liquid and boil for another 8 minutes. Remove from the heat and let cool. Only then stir the honey into the liquid. (Not before, to preserve all the goodness of the honey!) Mix thoroughly, then stir in the lemon zest and finally, carefully stir in the blossoms. Immediately pour into small jars and seal tightly. Note: The tart, slightly nutty flavor of the daisies gives the jelly its aroma.
