Jenma's Tortellini Salad

Ingredients for 2 servings:

  • 500 g tortellini with any filling
  • 1 pack of shepherd’s cheese, approx. 200 g – 250 g
  • 350 g cocktail tomatoes
  • 1 tsp salt
  • 2 tsp sugar
  • 3 tsp herbs, mixed, dried
  • 3 tbsp olive oil
  • some water

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

quick and easy

Cook the tortellini according to the package instructions. Meanwhile, wash the cherry tomatoes and cut them in half. Cut the feta cheese into small cubes and add them to a bowl with the tomatoes. For the dressing, mix the salt, sugar, and herbs with the olive oil and a little water in a jug. The quickest way to do this is with a shaker. Alternatively, if you prefer something simple, mix a packet of Salatfix with the oil and a little water. Once the tortellini are cooked, drain them, add them to the bowl with the dressing, tomatoes, and feta cheese, and mix well.
