Ingredients for 3 servings:

  • 500 g chicken breast fillet(s)
  • 1 m.-sized onion(s)
  • 50 g ginger root, fresh
  • 3 chili peppers, fresh
  • 1 bulb(s) of red garlic (or 5 cloves)
  • 2 tsp oil
  • 2 bell peppers
  • 1 tsp lime zest, grated
  • 1 tsp thyme, dried
  • ½ tsp nutmeg (powder)
  • 1 tsp cinnamon powder
  • 1 tsp allspice, ground
  • ½ tsp clove powder
  • 2 tsp lime juice, freshly squeezed

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Peel and slice the onions. Peel and grate the ginger. Peel and finely chop the garlic. Combine the spice mix for the marinade and mix with the onions, garlic, ginger, and lime juice. Cover the meat with the marinade and marinate in the refrigerator for two hours. Heat the oil in a pan and sear the marinated chicken pieces. Add the whole chili peppers and the sliced ​​bell peppers and bake in the oven at approximately 180°C for about 10-15 minutes. The remaining marinade and the onions can also be used to make a sauce. Sprinkle some lime zest over the meat after serving. This dish can also be grilled.
