Ingredients for 4 servings:
- 8 Jerusalem artichokes, they must be fresh and firm
- 2 shallots or 1 red onion
- 1 tsp mustard
- salt and pepper
- 1 tbsp red wine vinegar
- 3 tbsp oil, neutral

Mix mustard, salt, pepper, vinegar, and oil to make a vinaigrette. Peel the Jerusalem artichokes and slice them into wafer-thin slices. Raw Jerusalem artichokes have a delicate flavor. To serve, drizzle with the vinaigrette and sprinkle with the finely diced shallots.
