Jerusalem Artichoke Pancakes

- 1,5 kg Jerusalem artichoke (terrestrial artichoke)
- 500 g Potatoes
- 2 Pc. Fresh onions
- 3 Pc. Eggs
- 2 Pc. Garlic cloves pressed
- 0,5 tsp Salt
- 0,5 tsp Pepper
- 0,25 tsp Freshly grated nutmeg
- 6 tbsp Flour
- 0,5 tsp Ground caraway
- Clarified butter
- Wash the topinambur thoroughly …. (Tip: it’s best to use a hand brush) …. Peel the potatoes and onions …..
- Finely grate the topis, potatoes and onions …… (it’s best to use the food processor) …..
- To the mass we add the eggs, the pressed garlic cloves, salt, pepper and flour ….. ground caraway seeds should be added for the compatibility ……
- Mix well and fry carefully in hot clarified butter …….
- Serve with jam, chutney or just sugar …..
