Ingredients for 1 servings:

  • 500 g spelt flour
  • 1 bag(s) of dry yeast
  • 4 tbsp pumpkin seeds
  • 4 tbsp sunflower seeds
  • 4 tbsp sesame seeds
  • 4 tbsp flaxseed, crushed
  • 2 tsp, leveled salt
  • 1 tsp, leveled bread spice mix
  • 1 tsp honey (flower honey), liquid
  • 3 tsp tea (Jiaogulan tea)
  • 150 ml water, hot
  • 200 ml water
  • n. B. bran (wheat bran) for sprinkling

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 1 hour 30 minutes

Mix all the dry ingredients, except for the wheat bran, thoroughly. Now add the water, tea, and honey to the dry mix. Jiaogulan tea is made as follows: steep 3 teaspoons of the dried herb in 150 ml of approximately 90°C hot water for 5-10 minutes. I never throw away the scalded herb; I add it to the dough! Add the tea and herb to the remaining ingredients and knead well with a dough hook. The dough is then baked in a bread pan lined with baking paper at 200°C for 80 minutes. I sprinkle the dough in the pan with wheat bran and spray it generously with water. This makes the crust particularly beautiful! I also place a bowl of water in the oven. I only use top/bottom heat to bake bread, and after about 50-60 minutes, I have to cover the bread with aluminum foil to ensure it’s browned just right. The dry mix is ​​great to make in advance, so you have your own baking mix and then just need to quickly add honey, water and tea!
