Ingredients for 1 servings:

  • 500 g flour
  • 200 g sugar
  • 200 g hazelnuts, ground
  • 350 g butter
  • vanilla sugar

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 45 minutes

Mix the flour, sugar, and hazelnuts and sprinkle the butter flakes over them. Knead well. Place the dough in the refrigerator for at least 12 hours. Preheat oven to 195°C (175°C fan-assisted oven). Line a baking tray with baking paper. Shape the dough into small croissants and place them on the tray, leaving plenty of space between them. Bake for about 10 minutes. Let the croissants cool slightly, then dip them in the vanilla sugar while they are still warm. Then place them on a wire rack or similar to cool completely. You can use ready-made vanilla sugar for the vanilla sugar. I personally prefer to put a vanilla pod in a container with sugar and leave it there for a while.
