Ingredients for 6 servings:
- 1 kg lamb
- ½ cup olive oil
- 4 tomatoes, ripe, peeled and pureed
- 500 g pasta, Greek (kritharaki, rice noodles)
- 2 sprigs rosemary
- 1 cup cheese, grated
- salt and pepper

Cut the meat into small pieces and place it in a casserole dish or clay pot. Season generously with salt and pepper and add the pureed tomatoes and rosemary. Then add the oil and 1 cup of water and cook the meat in the oven at 200°C for about 30 minutes. When the meat is almost cooked, add 5 cups of water and the rice noodles. Stir the jouvetsi and return it to the oven for about 15 minutes. Season to taste and serve with grated cheese.
