Ingredients for 2 servings:
- 300 g pasta, cooked macaroni (possibly from the day before)
- 1 tbsp olive oil
- 2 m.-large zucchini
- 1 bulb(s) garlic, red
- ½ tsp chili, crushed
- 3 tbsp ham, diced
- 5 cocktail tomatoes, date
- 1 sprig rosemary, some needles
- 1 sprig of oregano, fresh
- e.g. salt and pepper
- Crème fraîche OR:
- 100 g mozzarella, grated
- 2 tbsp Parmesan
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
with fresh herbs
Option I: Layer the pasta in a baking dish, thinly slice the zucchini and peeled garlic using a food processor. Add the zucchini, garlic, and chili flakes to a non-stick pan with the olive oil and fry lightly. Then add the diced ham and the chopped rosemary sprigs and sauté with the heat off. Sprinkle the fresh oregano over the pasta, then pour in the contents of the pan, and finally the sliced tomatoes. Before serving, add a dollop of crème fraîche. Option II: Sprinkle the fresh oregano over the pasta, then pour in the contents of the pan, then the grated cheese, and finally the sliced tomatoes. Bake or grill in the microwave for 10 minutes.
