Ingredients for 1 servings:

  • 300 g cane sugar, fine
  • 1 packet of vanilla sugar
  • 3 eggs, separated
  • 1 pinch of salt
  • 1 large apple
  • 500 g nuts, ground, as desired
  • Hazelnuts, whole
  • Wafers, round

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Preheat the oven to 175°C fan/convection oven. Whisk the egg yolks with the brown sugar and vanilla sugar. Finely grate the apple and stir it into the sugar mixture. Add the ground nuts. Beat the egg whites with a pinch of salt until stiff peaks form and gently fold in. Place a spoonful of batter onto the wafers and press a whole hazelnut into each one. Bake the macaroons on the middle rack for about 30 minutes until golden brown.
