Ingredients for 6 servings:
- 6 carrots
- ½ apples
- 1 lemon(s)
- 2 handfuls of raisins
- 5 tbsp sunflower oil
- 3 tbsp honey
- ½ tsp cinnamon powder
- 1 organic orange(s), zest
- possibly sesame
Instructions
Working time approx. 25 minutes; Rest time approx. 10 minutes; Total time approx. 35 minutes
First, for the dressing, squeeze the lemon, add the oil, and season with honey and cinnamon. Mix well to create a smooth dressing. You should still be able to taste the lemon’s acidity, along with the subtle sweetness of the honey. The cinnamon shouldn’t be overly noticeable; it works its magic in the background. Add the grated orange peel. Pour the dressing into a large bowl and add the raisins. Don’t use too few raisins for this recipe! They add their sweetness when bitten into and balance the acidity of the dressing. Then peel and grate the carrots, chop the apple into small pieces, and add both to the bowl and toss to combine. Let it sit for a short while. If desired, garnish with sesame seeds. This salad is similar to a regular carrot salad with apples and raisins, but with a special twist: grated orange peel and cinnamon give it a fresh flavor that will have you wanting more and more. Tip: You can easily grate orange peel by wrapping the grater in baking paper and rubbing it through the paper. It’s hard to believe, but it really works. The entire peel stays on the paper and doesn’t get stuck in the grater.
