Jules Grapefruit and Feta Salad

Ingredients for 2 servings:

  • 1 pink grapefruit(s)
  • 0.33 cucumber(s)
  • 1 tsp apple cider vinegar
  • 2 tsp fruit vinegar (mango vinegar)
  • some salt, coarse
  • 8 coriander seeds
  • 2 tbsp oil
  • 100 g feta cheese made from sheep or goat milk
  • some pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Vegetarian, gluten-free

Peel and dice the grapefruit and cucumber. The grapefruit juice can be added to the sauce. Dice the cheese as well. Grind the coriander seeds and mix with the remaining ingredients to make a dressing. Adjust the amounts to taste. I calculated this serving size for two people as an appetizer.
