Ingredients for 1 servings:
- 1 handful of arugula
- 1 ball of mozzarella (125 g)
- 3 slice(s) mango(s), fresh, ripe
- 6 tsp Greek yogurt (10% cow’s milk)
- 2 tbsp grape seed oil
- 2 tbsp vinegar, sweet (e.g. pink balsamic vinegar)
- some cream of balsamic vinegar
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Low carb, super tasty
Arrange the washed and well-drained arugula on a plate. Drizzle with vinegar and oil. Drain the mozzarella, cut into 6 slices, and arrange on top of the arugula. Halve the fresh mango slices and place them on top of the mozzarella slices. Top each with 1 teaspoon of Greek yogurt. Garnish with balsamic glaze.
