Ingredients for 1 servings:

  • 300 g flour (spelt flour)
  • 1 tsp baking powder
  • 140 g sugar
  • 1 packet of vanilla sugar
  • 200 g butter or margarine
  • 2 egg yolks
  • 2 tbsp milk
  • 250 g walnuts, chopped
  • 100 ml cream or Cremefine
  • 50 g sugar
  • 1 tsp instant coffee powder

Instructions

Working time approx. 1 hour 15 minutes; Rest time approx. 1 hour; Total time approx. 2 hours 15 minutes

Christmas cookies with coffee and nut filling, makes about 60 cookies

Knead the dough ingredients together thoroughly. Wrap the dough in cling film and chill for about 1 hour. Heat the filling ingredients in a saucepan, stirring constantly, until a paste forms, then remove the pan from the heat. Roll out the dough thinly on a floured surface and cut out squares. Lightly cut each corner of the square toward the center. Place 1/2 teaspoon of filling on each cookie and fold every other corner piece over to form a wheel, pressing lightly on top. Bake in a preheated oven (160°C fan oven) for about 12 minutes.
