Ingredients for 1 servings:
- 2 ½ kg flour
- 1 kg sugar
- 250 g milk powder, e.g. Nido
- 100 g cake spice mix, e.g., Abido Cake Spices
- 5 packs of yeast
- 150 g aniseed, coarse
- 4 tsp cinnamon
- 2 tsp nutmeg
- 2 tbsp turmeric
- 260 ml vegetable oil
- 500 ml water
- 50 g sesame seeds, optional
- some olive oil for brushing
Instructions
Working time approx. 1 hour; Rest time approx. 5 hours; Cooking/baking time approx. 15 minutes; Total time approx. 6 hours 15 minutes
Tea cakes, biscuits
This recipe is for a very large portion; if you’re only making it for yourself, it’s best to start with 1/4 of the amount. Put all the ingredients in a bowl. Mix the dry ingredients first, then add the oil and water, and knead thoroughly. Let it rest for 3-5 hours. The dough will seem dry, but that’s how it should be; you could still add a little more milk (but only 1-2 splashes!). Divide the dough into equal-sized pieces. Then, one after the other, shape each piece into a round using olive oil (like a giant cookie, about 10 cm in size and 0.5 mm thick). Place the cookies on baking sheets lined with baking paper and bake one after the other for about 15 minutes on the middle rack at 180 degrees Celsius (top/bottom heat).
