Ingredients for 12 servings:

  • 1,000 g dough (Kadayif, dough threads – available in Turkish supermarkets)
  • 500 g butter
  • 250 g walnuts
  • 200 g almonds, chopped
  • 300 g cream cheese
  • 300 g quark
  • 200 g powdered sugar
  • 3 tbsp milk
  • 800 ml water
  • 700 g sugar
  • 3 slices of lemon

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Turkish dessert

For the syrup, boil 800 ml water, 700 g sugar, and the lemon slices for about 30 minutes, then chill. For the filling, mix together the quark, cream cheese, and powdered sugar. The mixture should be creamy. If the mixture is too thick, add 3-4 tablespoons of milk. Place the dough strands in a large bowl and pull them apart thoroughly. Melt the butter and pour it over the dough strands, mixing for about 3 minutes. Place half of the dough strands on a greased baking sheet and press down firmly. Then spread the cream over them and spread evenly. Sprinkle the walnuts (chopped beforehand) and almonds over them. Now spread the remaining dough strands over them and press down again. Be a little more careful this time, or the cream will seep through. Bake in a preheated oven at 200 °C for about 30-40 minutes (depending on the oven) until golden brown. Spread the syrup evenly over the hot kadayif. Let it rest for about 1 hour.
