Kaiserschmarrn with raisins

Ingredients for 4 servings:

  • 400 g flour, white or dark
  • 4 eggs, separated
  • 3 handfuls of raisins
  • 750 ml milk (whole milk)
  • 4 tbsp sugar (preferably fine granulated sugar)
  • 8 slices of butter (for multiple batches)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix the flour with the egg yolk and milk. Beat the egg whites until frothy, then slowly stir the flour mixture into the egg whites, making sure the egg whites don’t break apart. Melt the butter in a pan. Pour in the batter mixture. It shouldn’t be more than 2 cm thick. If there’s too much batter, make it several times and warm the finished batter in the oven. Loosen it every now and then so it doesn’t stick. Before turning it over, sprinkle a handful of raisins into the top, still-wet batter. Then turn it over; it’s okay if it breaks. Wait until the other side also starts to brown. Finally, break it into bite-sized pieces (using a wooden spatula is best), then sprinkle with granulated sugar and turn over so that everything starts to shine. This tastes best with homemade applesauce.
