Kale and quinoa salad with apple and tomato

Ingredients for 6 servings:

  • 100g quinoa
  • 200 g kale, fresh
  • 3 m.-sized apples (e.g. Elstar)
  • 1 m.-sized onion(s)
  • 3 tomatoes
  • Balsamic vinegar, light
  • olive oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Cook the quinoa in salted water according to the package instructions. Remove the kale from the stalks, tear it into small pieces, wash it, and dry it in a salad spinner. Sauté it in a pan with olive oil and let it simmer for 5-10 minutes over low heat. Dice the apples, onions, and tomatoes and add them to a bowl along with the cooked kale and quinoa. Season to taste with balsamic vinegar, olive oil, salt, and pepper.
