Ingredients for 2 servings:
- 600 g jacket potatoes or boiled potatoes
- 4 mushrooms
- 1 red bell pepper(s)
- 1 onion(s)
- 2 handfuls of spinach
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
for the utilization of vegetable leftovers
Dice the onion and bell pepper. Slice the mushrooms. If using boiled potatoes, cut them into bite-sized pieces. Heat a little oil in a large pan and fry the potatoes and onions until browned. Add the bell pepper and mushrooms and fry for 5 minutes. Season everything with salt and pepper. Finally, stir in the spinach and wait a moment until it wilts.
