Kale pizza

Ingredients for 2 servings:

  • 80 g kale, cleaned
  • 90 g cheese, grated
  • 2 eggs
  • salt and pepper
  • chili
  • 1 tsp guar gum or psyllium husk
  • 1 ball of mozzarella
  • 100 g mushrooms
  • 50 g sour cream
  • Pizza seasoning
  • 100 g tomato sauce or fresh cocktail tomatoes
  • olive oil

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 25 minutes

Low-carb

Pat the kale thoroughly dry and cut into pieces. Mix with the eggs and cheese. Season with salt, pepper, and chili. Add the guar gum and immediately stir in. Roughly chop the mixture in a food processor. Preheat the oven to 180°C fan/convection oven. Line a baking tray with baking paper and shape the mixture into a pizza shape. Then pre-bake in the oven for 20-25 minutes. Meanwhile, pat the mozzarella dry and slice. Clean the mushrooms and slice them as well. Season the sour cream with the pizza seasoning, salt, and pepper. Spread the sour cream on the pre-baked pizza base, spread the tomato sauce on top, and top with the mushrooms. Brush the mushrooms with olive oil and top with the mozzarella. Season everything again with salt and pepper if desired, and bake the pizza for another 15 minutes.
