simple, vegetarian alternative, kale tastes different here than usual

The kale retains much of its original flavor and remains firm to the bite. Toss the kale in boiling salted water, simmer for 5 minutes, then rinse with cold water. Sauté the chopped onion and garlic in oil in a pot. Then add the following ingredients and simmer a little at a time. First, add the nutmeg, allspice, and cumin, then the broth, followed by a little water. Then add the sour cream and turmeric. Finally, add pepper, marjoram, salt, and, if desired, sour cream and fenugreek seed powder. Adjust the spices to your taste. This goes well with potatoes. Or, of course, for non-vegetarian dishes, anything that usually goes well with kale, such as sausages, chops, or smoked pork.
