Kale with orange segments and apricots

Ingredients for 4 servings:

  • 100 g apricot(s), dried
  • 150 ml orange juice
  • 2 oranges
  • 250 ml vegetable stock
  • 1 kg kale, fresh
  • 200 g onion(s)
  • some cinnamon
  • Clarified butter or oil
  • herbal salt
  • Pepper, from the mill
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Soak the apricots in orange juice. Slice the onions into wedges. Remove the ribs from the kale, wash, blanch, and roughly chop. Sauté the onions in fat until lightly translucent. Add the kale. Top up with vegetable stock. Add the apricots and their juice and simmer for about 45 minutes. Season with salt, pepper, cinnamon, and sugar. Slice the oranges into segments and serve.
