Ingredients for 6 servings:
- 2 packs of tortellini
- 15 cherry tomatoes, ripe
- 1 bell pepper(s), yellow
- ½ bunch parsley
- 3 garlic cloves
- 1 tsp oregano, freshly chopped
- 1 lemon(s), ripe
- 1 spring onion(s) or a bunch of chives
- 1 pack of sheep’s cheese, preferably softer from a Turkish grocery store
- salt and pepper
- oil
Instructions
Working time approx. 20 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 20 minutes
Dice the feta cheese and bell peppers, quarter the cherry tomatoes, finely chop the parsley and oregano, and place everything in a bowl. Squeeze the lemon and place it in a small bowl, finely chop the garlic and spring onions, and add it. Season with salt and pepper, mix everything well, add an equal amount of oil, and stir in. Cook the tortellini until al dente, add them to the bowl with the vegetables and feta cheese while still hot, and gently toss everything with the dressing. Refrigerate overnight and season again before serving.
