- 2 ½ kg pork (ham or roast)
- 2 cups cider
- e.g. smoked salt or liquid smoke
- Sea salt, coarse

Soak a clay pot or earthenware pot (a roasting pan or roasting bag will also work), rub the meat with smoked salt, add it to the pot, and pour in the cider. Cook in a covered oven at 150°C for 5 hours. Once the meat has cooled slightly, tear it into small strips and sprinkle with sea salt. Traditionally, it’s served with boiled cabbage and rice. Kalua pig, or kalua pork, is a must at an authentic Hawaiian luau. There, it’s wrapped in a banana leaf and cooked in a hole in the ground for half a day. This is a simplified version.
