Ingredients for 1 servings:
- 2 medium-sized potatoes, waxy
- 1 m.-sized carrot(s)
- 5 cm leek
- 1 egg(s)
- 3 tbsp milk
- 30 g Parmesan
- 1 tbsp oil (peanut oil)
- salt and pepper
- curry powder

1 person – casserole, quick and easy
Peel the potatoes and thinly slice them (using a cucumber slicer). Clean the carrot and leek and finely slice them as well. Then layer everything in an oiled baking dish. Sprinkle the individual layers with the seasonings. Whisk the egg with the milk and pour over the mixture. Sprinkle everything with Parmesan cheese. Bake at 220°C for about 30-35 minutes. I like this with a light yogurt and herb sauce and a fresh salad.
