Ingredients for 4 servings:
- 8 stale rolls, cut into dumpling bread
- 6 eggs
- 125 ml milk, lukewarm
- 2 tbsp flour
- Parsley
- 1 onion(s)
- 2 tbsp oil
- 350 g mountain cheese
- salt and pepper
- Oil for frying

Place the dumpling bread in a bowl. Add the eggs and pour over the milk. Finely chop the parsley and add it to the dumpling bread along with the flour. Dice the cheese. Finely dice the onion and sauté in the oil. Add the cheese to the dumpling bread, mix everything together, and season with salt and pepper. Heat the oil in a pan. With wet hands, form dumplings and place them in the pan. Flatten the dumplings with a spatula and fry on both sides. Serve with a fresh salad or add the dumplings to a clear broth.
