Ingredients for 4 servings:
- 100 g flour, smooth
- 200 g bread(s) (dumplings), or stale rolls or white bread cubes
- 200 g grated cheese, e.g. Emmenthaler, beer cheese, Tilsiter, etc.
- 1 medium-sized onion(s), finely chopped.
- Salt
- pepper
- Chives, cut into rolls
- Margarine or oil for frying
- 1 liter broth of your choice, hot

North Tyrolean Brixenthal style
Knead the flour, dumpling bread, grated or diced cheese (I always use both and use up leftover cheese), chopped onion, salt, pepper, and chives with a little water into a firm dough. Form dumplings and flatten. Fry on both sides in hot fat until golden brown. Serve with hot soup (cube soup or beef broth).
